Ginger Cookies
7 oz caster sugar
4 1/2 oz butter
21/2 Tablespoons of golden syrup
12 oz Self Raising Flour
pinch salt
1 1/2 tablespoons Ground Ginger
1 teaspoon Bicarbonate of Soda
1 egg (beaten)
Method
1. Place in a saucepan the butter, sugar and syrup into a saucepan and melt over a low heat.
2. Set aside and measure out all the dry ingredients and place in a bowl together. ( Flour, salt, ginger, bicarb of soda)
3. Beat the egg with a fork until light and fluffy, then add in a quarter at a time to the melted butter and sugar mixture. Mix in thoroughly and then add the next quarter and so on until all the egg is thoroughly mixed in.
4. Sieve in all the dry ingredients into the melted mixture or vice versa, depending on which is the larger space. ( As it may start to bubble due to the bicarbonate of soda)
5. Using two dessert spoons, spoon portions onto a lined baking tray. (Smaller is better than bigger and remember they will spread so keep a good space in between each cookie)
6. Bake for approx. 12- 15 minutes (depending on your own oven) or until golden brown.
